Experiments with gluten free/dairy free/nut free/almost Paleo chocolate brownie baking. Mixed with raspberries and coconut ice cream - amazing!
I’ve been dairy free since lay October (for allergy reasons) and had a bunch of coconut flour to use up - and really wanted brownies! This worked well. They’re fluffy and chocolatey - next time I will add vegan chocolate chips to the batter for sure.
Recipe (adapted from Primal Palate’s Dark Chocolate Coconut Cake recipe):
~1/2 C coconut flour
~1/2 C cocoa powder
1 tbs baking soda
Pinch of sea salt
7 eggs (I know, sounds extreme!)
1 tbs vanilla
~ 1/2 C maple syrup (could use honey instead
~ 1/2 C melted coconut oil
Preheat oven to 325. Mix dry ingredients in one bowl, wet ingredients in another, then mix dry into wet. The batter will be pretty wet! Pour into one large greased pan or two smaller ones (I used coconut oil in one pan and parchment paper in the other and both worked well!) and bake for around 30 mins or until a toothpick comes out clean.
Experimenting with frosting next!
